Updated! Dry Fly Washington Wheat Whiskey with Dan, Ryan & Goran

IMG_2489bAs you know if you’ve read any of our previous 200-some-odd posts, here at iScotch we are novelty junkies. We love new, weird ways of making whiskey. We’re going to be showcasing some new stuff here over the next few months, including some flavoured whiskies, some foreign whiskies and just some weirdo whiskies. It’s the combined result of 1) drinking all the “regular” whiskey at the LCBO and 2) wanting to continue to broaden our palates. Different grains, different methods and geographies, different everything! We’re going to do our best to find them, try them and tell you about them.

And to kick all that off, here’s one of Dan’s finds, the Dry Fly Washington Wheat Whiskey. I can tell you 4 things from the name, can you guess what they are? Who, Where, What and Of What.

Dry Fly‘s schtick seems to be a fishing theme, centering around the Gallatin River. Which appears to be in the middle of Montana, while the distillery is out of Spokane in eastern Washington state. Whatever, pacific northwest represent! They do several other interesting things, like a bourbon and a barrel aged gin, of all things. We’ll keep an eye out.

I don’t have a good indication of how much wheat to what they’re using in the mash here (there was a lot of writing on the bottle and I was, y’know, drinking whiskey) but it definitely presented in the flavour.

**Update 2014-05-13:  Kent at Dry Fly got back to us in the comments to let us know “100% Wheat is used in our mash bill. Nothing else. Three years in 53 gal new American oak.” Thanks for that!

Here’s what we thought:

Dan – organic apple juice
Simon – light, bright orange
Goran – non-chillfiltered?
Ryan – cloudy

Dan – seawater, toasted almonds, apple, coffee
Simon – bread, orange, citrus, light, unique
Goran – caramel & moss, blended scotch
Ryan – rosy, polish, cherry, bitters

Dan – spicy, malty, warmth, burnt sugar, toasted almonds
Simon – definite cereal element, sweet & spicy
Goran – honey, spice, butterscotch, coconut
Ryan – licorice, flowery, oaky

Dan – tart & numbing
Simon – spiced tongue heat
Goran – long finish, chest warmth, hay
Ryan – heavy burn on the chest, sweet, mossy

Dan – like water, apple, toasted almonds with cream
Simon – much sweeter, much smoother
Goran – n/a
Ryan – n/a

ginger splash
Dan – maltier ginger ale
Simon – sharp ginger & wheat
Goran – compliments spice & carbonation, maltier butter
Ryan – n/a

    Thanks from the Dry Fly team for trying our Wheat Whiskey, 100% Wheat is used in our mash bill. Nothing else. Three years in 53 gal new American oak. We appreciate the nice comments.

    Awesome. When did Dry Fly move to 3 years in oak? My previous, numerous, bottles I think were aged 2 years. Just curious.
